Baked Zucchini Boats

I made these the other day and I wish I would have taken a picture. They were really yummy. Actually I had planned to stop doing this blog. I know, I just started it but I was feeling a little overwhelmed at the time. I think I;m better now. lol. So I hope someone is going to visit here. I did this recipe for 2 since it's just hubby and me, but most of my recipes are for more.

Baked Zucchini Boats
2 Medium Zucchini
1/4 cup finely chopped onions
1/4 cup finely chopped bell pepper
garlic (I used about a teaspoon of the jar stuff that's chopped
1 slice of 4.5 carb bread ground to bread crumbs
1 egg
heavy cream
1/3 cup Italian blend cheese

Directions:
Half the zucchini and set aside the insides
Brown the onions and bell pepper and insides from zucchini in a skillet with 1 tbls of oil or butter
In the meantime I run the bread through the food processor and put it in a medium bowl
Add the cheese and egg and garlic to the bowl.
After the onions and pepper have cooled a little, add them to the bowl and stir.
Stir in the cheese
Then I just add enough cream so the mixture will clump together. Fill the zucchini with the mixture just over the edges.
Then I sprinkle some more Italian blend cheese over the tops and bake at 350 for about 20-25 minuets.
Check tenderness with a fork. Remove and enjoy!
I think this side goes with just about anything. I had them with Bar b que chicken.
You can make them a meal in themselves by adding ground meat or sausage. Make more by just doubling everything.

Isn't losing weight great?

So yesterday I decided I had to do something. I have been off my low carb for a week and that's not good. Not only was I gaining weight back but I wasn't feeling great either. So I had 2 protein shakes during the day and dinner with hubby. Dinner was ham and deviled eggs plus a little corn. Surprisingly I wasn't hungry during the day. I think starting this blog kept my mind off eating so I wasn't head hungry and the shakes kept me from being physically hungry. The real reward was getting on the scale this morning and seeing I had lost 1 1/2 pounds. Not back to what I was last week but getting there.

Welcome. New Blog, First Post

I started the journey of low carbing in January 2011. I've tried lots of ways to lose weight and so far I am very encouraged about low carbing. There are some great forums, blogs and books to help along the way. After having a Lap Band for almost 3 years and having very little success I've been very discouraged. I started with a new primary care doctor who told me that I am so insulin resistant that the band was not going to work for me. When I started seeing him my blood sugar was out of control but after 3 months and a change in medication they are almost normal. I'm not losing tons of weight fast but at least I am losing by watching the carbs. I hope this blog will be of interest and will have some helpful yummy recipes, sometimes mine and sometimes linking to others.
